We source and select only the finest ingredients to ensure that every cake, every treat, every loaf of bread, and every pastry we make is as delicious and delightful as it is safe and pure.
The Heart of Our Baking is Ingredients
Flours and Sugars
We use both bleached and unbleached wheat flours, rice flour, and our own combination of flours to create the right crunch in our pastry, and the appropriate amount of gluten for each of the types of bread we bake. Our goal is to create a clean, natural taste and a superior texture.
We use molasses, cane sugar, beet sugar, brown sugar, coconut sugar, date and palm syrup and pure bee’s honey to sweeten most of our baked goods.
Dairy
We use butter, cream, and milk; always pasteurized and sourced from dairy farms that produce high quality dairy products and are in compliance with all U.S. regulations that yield dairy products that are free from hormones and antibiotics. One taste of our classic Buttercream Icing and you’ll notice the rich and creamy texture and just the right amount of sweetness.
Fruits and Vegetables
We believe in the power of nature's pantry. We use fresh fruits and vegetables to naturally flavor and color our products. From the bright sweetness of apples and berries to the earthy notes of zucchini and carrots, these ingredients are at the core of our Fruit Cakes, Vegetable Breads, and vibrant colored pastas. We also make our own dehydrated vegetable powders like mushroom and carrot to provide intense flavor without any artificial additives.
Nuts
Our bakery would not be complete without the rich, satisfying crunch of nuts. We use a variety of high-quality nuts, including almonds, cashews, pistachios, and hazelnuts, sourced from trusted suppliers. Whether they're roasted for our Nut Mix or ground into a fine meal for our Almond Cake, you can be sure they are of the highest quality.
Spices and Flavorings
Our unique spice blends are the soul of many of our creations. We specialize in creating the best products spotlighting Pure Ceylon Cinnamon and our Curry Powder is a house-made blend of spices, roasted to perfection in our kitchen to create distinct flavors ranging from Light to Dark Roasted.
In addition to cinnamon, we also use pure vanilla extract, cardamom, cloves and other natural spices to give our baked goods their comforting, aromatic appeal. We never use artificial flavorings.
Leavenings and Grains
We use active dry yeast, baking powder, and baking soda to give our products the perfect rise and texture. Our Multigrain Bread is packed with a hearty blend of wholesome seeds and grains, while our Oatmeal Chocolate Chip Cookies feature high-quality rolled oats for a satisfying, chewy texture.
Chocolate
We are very particular about our chocolate. We use a range of high-quality chocolate, from dark to semi-sweet, ensuring that every chocolatey treat – from our rich Chocolate Cake and Pain au Chocolat to our classic Brownies – has a deep, complex flavor.

At Ginger and Pickles, we understand the seriousness of food allergies. We are committed to providing delicious, safe products for all our customers. Our comprehensive allergen management policy is designed to minimize the risk of cross-contamination and ensure transparent labeling.
Our Allergen Policy
We work with common allergens in our kitchen, including wheat, eggs, dairy, and nuts. Our policy focuses on three key areas:
Ingredient Sourcing: We verify the allergen information of all our ingredients directly with our suppliers to ensure we know exactly what is in our products.
Strict Procedures: Our staff is trained in rigorous cleaning protocols and allergen-specific handling procedures to prevent cross-contamination. While we take every precaution, all our products are made in our home kitchen in which other common allergens are also handled. By ensuring we use rigorous separation, cleaning, sanitation, and disinfection procedures we strive to ensure all our products are allergen safe and safe to enjoy.
Dedicated Equipment: Where possible, we use dedicated equipment for certain allergen-containing products, or we thoroughly clean and sanitize equipment between uses to minimize risk.
Allergen Labeling
We believe in clear and honest communication. All our product labels and menus prominently feature a list of ingredients and clearly state the presence of the following allergens:
All of our breads, cakes, and pastries contain wheat.
Our cakes, Challah, pastas, and many of our pastries contain eggs.
Many of our cakes and pastries, along with our icings, contain dairy.
Tree nuts and peanuts are in our nut mixes, almond cake, and many other specialty items.
